These little beauties are veggies, very inexpensive, super easy to bake, stay "al dente" in the fridge for about a week, and taste delicious hot or cold in place of pasta.

GUILT-FREE SPAGHETTI SQUASH "PASTA"
1 spaghetti squash (or more to make ahead)
2 tbs avocado oil or coconut oil
Salt & pepper to taste
Preheat the oven at 350 degrees
Cut squash in half (either length wise or cross wise. Be careful with that knife!)
Scoop out and discard the seeds
Brush on oil on the cut side
Season the cut side with salt and pepper
Place cut side up in a glass pyrex or cookie sheet
Bake for approximately 45 mins at 350
Remove and let cool
Use a fork to scrape out the "spaghetti"
Use in place of pasta
